Definition

What is sourdough?

It is bread risen with a living starter — flour, water, salt and time — instead of added commercial yeast. Wild yeast and lactic acid bacteria develop flavour, aroma and structure. For a fuller definition, including how this differs from traditional sun bread, read the full guide.
